Once we arrived at Fingal Island Stinker wasted no time casting a line into the water.
Usually he's able to catch a good feed of flathead in this spot, but today he was really struggling.
As he said, though, "the best fisherman in the world can't catch a fish if there's none there!"
While we waited for that elusive fish to bite, Stinker tried to teach Hammo a little bit about his fishing technique.
Stinker keeps his finger gently on the line while casting out, so he can feel exactly what's going on.
When he senses a fish having a nibble at his bait, he counts to 30, then strikes.
"Try to take your time," he advises. "Don't let the adrenaline wash over you."
Ever the environmentalist, Stinker tries his best to hook fish in the mouth, not deep in the throat.
If he decides later to let the fish go, hooking them in the mouth gives them a better chance at a quick recovery.
Often, if he lands a really big fish, Stinker will just release it.
"If it's a big flathead, often it's a female and she could be carrying eggs," he says. "I reckon she's better in the water than in my kitchen."
Too engaged in learning how to fish, Hammo accidentally sat right on top of the last piece of bait Stinker had brought with us.
Half joking, and still hoping for a fish, Hammo laughed "maybe the flathead will jump out and have a bite of my bum!"
